I love soup. I love soup in all seasons but I love soup especially so at this time of year. I love the fact that any veg that is left over or about to go over can become tasty and warming in about 25 minutes plus chopping time. It is the fast food and the comfort food of our kitchen, frugal and luxurious it has endless variations and is never the same twice.
Soup goes perfectly with bread (gold star) or with a homemade sprinkle of spicy seeds. It freezes well and is the perfect dish to share. Seriously what’s not to love?
Today’s soup is ‘end of bag carrots’ with a splash of coconut milk, some bouillon and two past their best satsumas chucked in for good measure. Delicious.
